In German, fellatio without condom is transcribed as "natural french", including swallowing it is called "french total". I have looked for the usual English terms, but did not find them. Can you help me?

I'm pretty sure we have words for that... I just don't know them! Wait for the others...
Fellatio on a man would be a "blowjob" but this doesn't distinguish between using/not using a condom.
Swallowing = French total..... ? I'm interested in seeing what people have to say about this one.

"Blow job" or "BJ" seems to be peculiarly British; "to give head" is also used. "Does she spit or does she swallow?" is often heard (sorry, ladies!). German being ever so specific and accurate, I am only half-surprised you have different terms in German depending on how the operation is performed!... I don't think there is the equivalent list in English (people would just say "with or without a condom", I think).
Any dictionary of English/American slang will give you a long list of synonyms with many regional variations.
"Fellatio" would normally be performed on a man, by definition; on a woman, it is "cunnilingus" - not to be confused with a well-known Irish airline company, or with the expression "a cunning linguist" (used by people who don't like people like us when referring to people like us - the linguists I mean).
I shall stop here - this Thread, I feel, promises to be as long and intense (no pun intended) as the itchy-crotch one, or more...

Well, specific terms for this are necessary for prostitutes, if they want to let customers know what is included in their choice of services.
I want to inform myself about the infection risk (HIV, hepatitis) in both cases.
Btw, is "choice of services" good English?

This is an interesting query, which is more about service(s) than language, perhaps!
I presume that, any prostitute who is asked what she does and what she does not do, will answer - whether asked face to face or over the telephone. As for the way that services are advertised and the way that services are described, I have no idea!...
If I take your post to be serious in relation to risk, and if I may venture a word of advice that has nothing to do with language and all to do with hygiene and health - the use of condoms is highly recommended in any casual-sex situation, whatever it may be.
Also, contrary to what many people believe, HIV/AIDS can be contracted through having unprotected (without condom) oral sex - the risk is lower than with unprotected (without condom) intercourse, but I have read in a respected medical journal that there
isa risk. In 'regular' kissing, there would be no risk involved, but there could potentially be a marginal risk in practising what is known in English as 'a French kiss' (with someone's tongue down someone else's throat).
Just as in German, in English, many activities regarded as risqué (in more ways than one) are referred to with the adjective 'French'!
I assume your post to be entirely genuine and have replied accordingly.

I've always used the verb to suck for it, or just oral sex (for both performed on a man or a woman). Blowjob is also very common though.

You're either having a laugh or genuinely putting together a brochure for an escort agency,
in which case,
"blow job" is the correct phrase for main deed,
although one might relatively politley refer to " a bit of oral",
There are all kinds of sniggery funny euphemisms,
"playing on the pink piccolo, eating the pork sword etc "

French polishing is a term used in the sex industry terminology as an alternative to 'fellatio', although I think it has more to do with lipstick rather than distinguishing between clients wearing a condom or not.

A discussion of words like these is acceptable here, provided that it remains serious and academic in tone, and is restricted to the meanings and usage of the words.
If a non-native speaker hears such words in conversation, or is trying to translate a public health document, (s)he has a very good reasons to ask what they mean, and may not be able to find them in a dictionary. We really do not need to know if they will be put to some other use.

One of my hobbies is woodwork and I do really enjoy the lustre raised by French Polishing. French Polishing is my finish of choice because of the lack of manufactured chemicals and I enjoy the mild exercise and slight sweat.

Getting back to the point, I have discovered some 'punting' acronyms for condomless fellatio, which include:
BBBJ = bareback BJ
OWO = Oral Without (condom)
FWO = French Without
Then I discovered that wikipedia has a whole list of prostitution-related jargon terms which makes for an interesting read.
I also discovered that I have lived a very sheltered life...
